WYEAST STRAIN: 3068 | Weihenstephan Weizen™
The classic and most popular German wheat beer strain used worldwide. This yeast strain produces a beautiful and delicate balance of banana esters and clove phenolics. The balance can be manipulated towards ester production through increasing the fermentation temperature, increasing the wort density, and decreasing the pitch rate. Over pitching can result in a near complete loss of banana character. Decreasing the ester level will allow a higher clove character to be perceived. Sulfur is commonly produced, but will dissipate with conditioning. This strain is very powdery and will remain in suspension for an extended amount of time following attenuation. This is true top cropping yeast and requires fermenter headspace of 33%.

Liquid Yeast Shipping Policy
It's hot down south, so all liquid yeast orders are shipped with an insulated pouch and two free ice packs. Liquid yeast is shipped to minimize transit time. If you order liquid yeast late in the week with a shipping method that would span the weekend we will hold your order to ship Monday. We recommend a 1 or 2 day shipping time on all liquid yeast orders. USPS Priority Mail is 2 day shipping to most of the Continental US. Liquid yeast is guaranteed viable if it spends no more than 2 days in shipping.
Liquid Yeast Warranty
As long as Liquid Yeast spends a maximum of two days in transit it is guaranteed viable and warrantied. If you receive warrantied yeast from us that does not ferment simply e-mail email@example.com to receive a replacement pack or refund. Please include the batch code, manufacturer date, your original gravity reading and a second gravity reading taken at least three days after pitching.
